ABOUT THE CREATOR OF NUMEAL™

Dr. Kalpna Ramji, Ph.D

After obtaining her Ph.D. in Nutritional Sciences from the University of Connecticut, Dr. Ramji set out to help her clients live healthier lives. Packed with all the essential amino acids, NUMEALallows everyone to enjoy their favorite traditional foods without guilt.

Specializing in Lipoprotein and Cholesterol metabolism, her PhD focused on sitostanol (a plant sterol) in understanding cholesterol-lowering properties. In addition, Dr. Ramji has also conducted clinical studies to evaluate the effect of dietary cholesterol (from eggs) on lipoprotein metabolism. During her Ph.D., Dr. Ramji established expertise in cholesterol metabolism.

After receiving her Ph.D., Dr. Ramji completed her post-doctoral research training in Cardiovascular Biology where she studies the role of Aortic preferentially expressed gene (APEG) in dilated cardiomyopathy at Brigham and Women’s Hospital, Harvard Medical School, Boston.

NUMEAL™ TACO FLATBREAD

20-25 min

Serving Size : 2 medium size flat breads, 1 serving

 Ingredients:

  • NUMEAL™ – 1/2 cup
  • Water -1/4 cup
  • Olive oil  – 2 teaspoon
  • Salt – ⅛ teaspoon

 Directions:

  • Take 1/2 cup of NUMEAL™ 
  • Add 1/8 teaspoon of salt and 1 teaspoon of olive oil.
  • Add 1/4 cup warm water and add water little by little and using a fork knead into a soft dough  (May need 4 tablespoons to knead the dough). 
  • Rest for 10 min and roll out into 5 inch circles.
  • Place the flat bread on a hot pan and cook both sides with remaining 1 teaspoon of olive oil

Best served with Vegetable or Chicken Korma

Note: Due to low gluten it can stick to the rolling pin. Sprinkle some flour on the surface…to make it not stick. 

NUMEAL™ INSTANT DOSA

Serving Size : 2 medium size crepes, 1 serving

Ingredients:

  • NUMEAL™ – 1/2 cup
  • Water -1 cup
  • Olive Oil – 1 teaspoon
  • Salt – ⅛ teaspoon 

Directions:

  • Mix all the ingredients to batter consistency and let it rest for 10 mins
  • In a heated pan, pour into crepes 
  • Add 1 teaspoon of oil and cook till well done on both sides

Best served with potato cauliflower curry.

Serving size: 2 pancakes

Ingredients:

  • NUMEAL™ -1 /2 cup
  • Vanilla almond milk – 1/2 cup
  • Sugar – 1 tablespoon 
  • Ghee or melted butter – 1 tablespoon
  • Baking powder – 1/2 tablespoon 

Direction:

  • Mix all the ingredients and let it rest for 10 mins
  • In a heated pan or pour into pancakes
  • Cook well on both sides
  • Makes 2 pancakes 

Best served topped with Berries and maple syrup or honey

Serving size: 2 waffles

Ingredients:

  • NUMEAL™ -1 /2 cup
  • Vanilla almond milk – 1/2 cup
  • Sugar – 1 tablespoon 
  • Ghee or melted butter – 1 tablespoon
  • Baking powder – 1/2 tablespoon 

Directions:

  • Mix all the ingredients and let it rest for 10 mins
  • In a heated pan or pour into waffles
  • Cook well on both sides
  • Makes 2 waffles

Best served topped with Berries and maple syrup or honey

NUMEAL™ TUTTI FRUITY COOKIES

25-30 min

Ingredients:

  • NUMEAL™ –  1 cup
  • Tutti-fruity – 1/2 cup
  • Powdered sugar – 1/3 cup
  • Corn flour – 1.5 tablespoon
  • Butter or vegan butter- 4 tablespoon
  • Almonds and cashew chopped – 1 tablespoon each
  • Baking powder – 1.5 teaspoon
  • Almond milk – 1/4 cup

Directions:

  • Mix all ingredients and make a soft dough 
  • Refrigerate for 30 min 
  • Use a rolling pin to roll out the dough to your desired thickness 
  • Cut into cookie shape of your choice
  • Preheat oven for 350 degree F
  • Bake for 15 minutes 
  • Cool on rack and store
  • Makes 4 servings

NUMEAL™ PEAS PARATA

20-25 min

Ingredients:

  • NUMEAL™ – ½ cup
  • Frozen thawed peas – ½ cup
  • Green chilies – 2 chopped
  • Ajwain – 1 teaspoon
  • Oil – 1 Tablespoon + 1 teaspoon
  • Cumin powder – ¼ teaspoon
  • Coriander powder – ¼ teaspoon
  • Chili powder – ¼ teaspoon
  • Garam masala powder- ¼ teaspoon
  • Salt – ½ teaspoon

Directions:

  • Thaw frozen peas and sauté in 1 teaspoon oil with green chilies and ajwain. You can add all the dry spice powders and mash it coarsely. This should be dry. Add salt to taste.
  • Mix NUMEAL with ¼ teaspoon salt and a little less than ½ cup water and knead the dough.
  • Rest for 10min and roll into 2 round disks.
  • Use the filling and seal with the 2nd disk. Seal with water and use oil to cook the parathas

As the dough rests, you can now prep the peas masala.

NUMEAL BANANA NUT BREAD 3

NUMEAL™ BANANA WALNUT BREAD

60 min

Ingredients:

  • NUMEAL™ – 1 ½ cups
  • Ripe bananas – 2 to 3 medium-sized peeled and mashed
  • Butter, melted – ⅓  cup
  • Baking soda – ½  teaspoon
  • Salt – 1 pinch
  • Sugar – ¾  cup
  • Egg – 1 large, beaten
  • Vanilla extract – 1 teaspoon
  • Walnuts – ½ cup

Directions:

  • Preheat the oven to 350°F and butter a loaf pan or pan of your choice
  • In a mixing bowl, mash the ripe bananas with a fork until completely smooth.
  • Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt.
  • Stir in the sugar, beaten egg, and vanilla extract.
  • Mix in the NUMEAL.
  • Add the walnuts.
  • Pour the batter into your prepared loaf pan.
  • Bake for 50 minutes to 1 hour at 350°F (175°C), or until a toothpick or wooden skewer inserted into the center comes out clean.
